AYA express the Peruvian culture by the food, taste and flavours of the typical Peruvian gastronomy. Their menu is based on a typical dishes and recipes from Peru with a soft fusion with the Asian gastronomy and ingredients. Using organic ingredients and produce from Bali and supporting farming communities. Their dishes are traditional Peruvian food using modern culinary techniques.
Peruvian food is influenced for the fusion cuisine like is Nikkei (Japan/Peru) and Chifa cuisine (China/Peru). Moreover, we have a Indo influence from the local ingredients.The Chef and co-owner of AYA is a Peruvian chef passionate for the food of his country. His designs the concept of AYA to bring us the tastes of his gastronomy. The ceviche, the most typical dishes of Peruvian cuisine.
They use local ingredients to support the Indo production and development, that give to the Peruvian recipes an Asiatic touch. Nikkei and Chifa cuisine is already a fusion of Peru and Asia. Made the traditional Peruvian food with Indonesian ingredients and products is a must in the integration of our traditional food with the indo flavours.
Spicy and fresh Indonesian ingredients are not far from the tastes of Peru. Casual and shared food, open kitchen to approximate process to the customer. Interaction between the chef and the clients who is going to explain about the food experience.
